It is the educational framework developed over more than twenty years of teaching bakers and working alongside healthcare professionals. Healthy bread begins with healthy soil. It passes through the hands of farmers, millers and bakers before arriving on your table. Diversity Bread® reconnects those relationships, celebrating diverse grains, botanicals, fermentation and craftsmanship in every loaf.
It is more than a recipe. It is a way of baking that values diversity over monoculture and relationships over shortcuts.
Personalised Bread
Once you understand how to bake Diversity Bread®, the next step is learning how to personalise it.
Personalised Bread is the practical application of Baking as Lifestyle Medicine. It teaches you how to adapt bread to the individual, taking into account their genetics, gut microbiome, nutritional requirements and digestive tolerance.
For a clinician, this means understanding how bread can be personalised to support the person sitting in front of you.
For a baker, it means something equally important. Personalisation is the opposite of monoculture. You learn to adapt your bread to the season, your environment, your local flour, your fermentation and your community. Like wine reflects its terroir, bread can reflect the place where it is made.
The Diploma
The Diploma teaches the complete Proven programme.
Year One focuses on learning to bake Diversity Bread®.
Year Two explores Personalised Bread and the clinical application of Baking as Lifestyle Medicine.
Although many students join us as bakers, they often continue into the second year because they discover that understanding people transforms the way they bake. Likewise, healthcare professionals learn that understanding bread transforms the way they think about nutrition.
