A list of edible flowers

The tradition of consuming flowers as part of a daily diet is something that started out in ancient times, with the ancient Greeks and Romans reportedly adding calendula flowers to their salads. It is easy to see why they used flowers in their cooking in these times, as they were a readily available resource and added huge amounts of flavour to the food. Sadly though the use of edible flowers in cooking and baking is something which seems to have declined in Western cultures. So why should we be making more of an effort to include edible flowers in our food?
