Arabinoxylan | Research Level

We have all been told that we need to eat wholegrain bread. But why is that important? Well one reason is, if you eat wholegrain bread then you eat Arabinoxylan (AX). 

The wholegrain provides us with a healthy dose of fibre, and a key fibre in the wholegrain is AX. AX is a hemicellulose found in the cell walls of cereal grains and deserves particular attention as a prebiotic.

And why sourdough? The fermentation of the grain through the sourdough process aids the breakdown of AX, and we learn in this article today about the incredible health benefits we gain from AX through all our wholegrain sourdough bakes....
