Stock cubes and bouillon might have their place in modern cooking but homemade bone broth is unbeatable in terms of flavour. It is wonderful to combine with my Savoury Sourdough Pastry to make this hearty and warming Sourdough Pastry Beef Pie. If you’re interested in the health benefits of bone broth, I have delved further into whether it is beneficial for the gut microbiome.
Prep time: 15 minutes
Cook time: 3–4 hours, including time to cool
Makes: 2 litres broth
Ingredients:
If you don’t have enough beef bones to make stock, you can freeze them in airtight bags until you have more. I have not given specific quantities here because there is no way I can gauge how many bones you will have so this is a guide, rather than a recipe.
Leftover roasted beef bones from 1 side of beef rib (any beef bones will do)
Garlic
Bay leaves
Thyme
Parsley
Carrots
Celery tops
Water
Equipment:
4-litre stockpot or deep saucepan with lid
Muslin cloth or sieve
Storage containers for your broth
Method:
To make the broth, put all the roasted bones in the pot, along with the garlic, bay leaves, thyme, parsley, carrots and celery tops. Scrape in all the fat and gooey beef juices from the roasting pan. Add enough water to cover the bones. Place over a medium heat and bring to the boil, then three-quarters cover the pot with a lid, leaving room for the steam to escape. Reduce the heat to a low simmer for 2–3 hours. Season with salt and pepper if you wish.
Cool for 30–40 minutes, then strain the broth through a muslin cloth. Discard/compost the bones and vegetables. Leave the liquid to separate from the fat, then remove the fat and place it in a separate container. Store both the fat and the stock in the fridge until needed.
The fat will keep for several weeks in the fridge and can be put towards making our Savoury Sourdough Pastry.
The stock will keep in the fridge for several days, and can also be frozen until needed.
Once you have your broth and Savoury Sourdough Pastry made, you can then go ahead and make our delicious Sourdough Pastry Beef Pie.
