WHAT’S INCLUDED – 3-DAY NUTRIGENETIC PERSONALISED SOURDOUGH WORKSHOP

This isn’t just a baking course. It’s a personalised programme designed to teach you how to bake, eat, and share bread as preventative healthcare. Over three months, leading up to your time at the School, Dr Vanessa Kimbell works directly with you to understand how your body responds to bread — through genetics, metabolism, and lived experience — so that when you bake, every loaf is uniquely tailored to support your health.
TWO PERSONAL CONSULTATIONS
You’ll have two private one-to-one sessions with Dr Kimbell in the months before your workshop. These consultations are in-depth health and nutrigenetic assessments exploring your relationship with bread, how it makes you feel, and any symptoms you experience — from bloating or blood sugar fluctuations to energy or mood. Together, you’ll map out how bread fits into your physiology and daily life.
NUTRIGENETIC ANALYSIS
You’ll complete a Core Nutrigenetics Report, which screens for key markers such as gluten and lactose tolerance, coeliac predisposition, digestive capacity, and genetic patterns linked to metabolic and cardiovascular health. Dr Kimbell interprets these results personally, using them to design your personalised bread protocol and dietary framework.
PERSONALISED BREAD & HEALTH PROGRAMME
Based on your results and consultations, Vanessa develops a detailed programme showing not only what kind of bread suits you best, but how to eat it to optimise digestion, blood sugar balance, and long-term metabolic health. This forms part of your confidential student record and includes tailored baking formulas, techniques, and nutritional recommendations.
THREE-DAY IN-PERSON WORKSHOP
You’ll spend three immersive days at The Sourdough School, learning to bake highly digestible sourdoughs such as the Porridge Boule and Proven Bread Tin loaf. Each day includes shared lunches made with seasonal, gut-supportive ingredients. You’ll learn the art and science of fermentation and how bread can be used therapeutically.
CONTINUED SUPPORT
After your workshop, you’ll have three months of access to Dr Kimbell’s live weekly tutorials every Tuesday at 4pm, along with full access to her online videos, resources, and recipes.
ONGOING CONNECTION
Once your support period ends, you’ll be invited to join The Sourdough School alumni community — a lifelong connection to a network of bakers, health professionals, and researchers dedicated to baking as lifestyle medicine.

We’ll be creating a blend of flour, milling the grains to make fresh flour and using existing and current research we will create new formulae for some beautiful gut-friendly sourdough bread.
