Tartines are a wonderful way to feature and savour seasonal ingredients, and they are just a joy to eat at any meal. These tartines feature our healthy bread paired with live yogurt and raw natural honeycomb, topped with fresh blood orange, pistachios and fresh thyme.

In our sourdough courses, we often talk about eating the rainbow and milling a meadow.  These phrases simply mean introducing diversity into your diet by eating a wide range of foods. We are not meant to live in a world of monoculture, and in fact we need variety in order to foster every aspect of our health. Here at The Sourdough School, we are dedicated to a set of core values and principles in making sourdough bread that helps to introduce these ideas into everyday life. One of the ways that we like to show our students how to incorporate these values is by demonstrating that symbiotic eating, featuring healthy and delicious ingredients, is good for you.

Baking our 50% Wholemeal Classic Boule for the base for these tartines introduces a wide variety of ingredients to your diet, as well as dietary fibre. At the School, we also prefer to reduce refined sugar where possible, so this tartine uses raw, natural honey to flavour the tart yogurt. Raw honey is also a great source of antioxidants and phytonutrients, and it acts as a prebiotic for the bacteria in our gut. The yogurt in this recipe provides live probiotics and lactic acid bacteria, which are beneficial for our digestive system. Making your own yogurt is incredibly easy and can help you to avoid the many artificial additives found in commercially made and flavoured yogurts. The blood oranges here offer polyphenols, vitamins, minerals and fibre, in addition to that gorgeous colour. Fresh thyme and crunchy pistachios provide a lovely savoury balance for the flavours of the tart yogurt and sweet honey.

Tartines are an excellent way to eat healthy sourdough bread with a variety of nutritious accompaniments, and show that it’s possible to make a simple and delicious meal without spending hours in the kitchen. This recipe comes together in a flash, as the tartines are so easy to assemble. They are also well-satiating, making them ideal for both a quick breakfast or a relaxing lunch.

Makes: 4 tartines

Ingredients:

125g live yogurt
10g raw wildflower honey
4 slices of 50% wholemeal classic sourdough
2 blood oranges, peeled and segmented
50g natural honeycomb
20g pistachios, roughly chopped
a few fresh thyme sprigs

Method:

In a mixing bowl, whisk together the yogurt and honey until slightly whipped and smooth. Taste for seasoning and adjust if necessary. To assemble the tartines, toast the sliced sourdough until golden brown. Spread a dollop of the honey yogurt on each,  then arrange the blood orange segments on top. Use a spoon or knife to separate small pieces of the honeycomb to dot on top of the tartines, and sprinkle with pistachios and fresh thyme leaves before serving.
