Tim Spector leads the way

When it comes to understanding nutrition Tim Spector leads the way.

I can tell you this, if you had to boil down what we teach you here, it is how to bake eat and share bread that nourishes.  Perhaps one of the most influential people in the world is Professor Tim Spector. I have known Tim for many years now.  You can believe the hype.  He is someone who has been prepared to step outside of conventional thinking and has lead the way to understand how we are symbiotic with our gut microbiome. In many ways it is because of Tim that I am in good health today, but this is another story, and I owe him a debt of gratitude.

This is a brilliant video, and one that I encourage you to watch.  Tim is not only a leader in a new way of thinking, he is also an activist and empowers others to look after their health and to look beyond the smoke and mirrors from the global food producers.  I especially recommend that you watch this video in light of the weight management and bread topic. What Tim has to say relates directly to why we bake to improve our health when it comes to lifestyle medicine.

Tim is right on point about our mission  –  we need to reduce environmental damage, and challenge the dynamics of inequalities in the food system.
