Pu-Erh Coconut Cake with Medjol Date

Increase Fibre:With the whole grain and coconut flour, and also the dates to increase the fibre intake

Antioxidants:Pu Erh Tea is good source of anti oxidants and also the coconut flour and coconut oil

Desiccated Coconut 15g ( 10g in the dough and 5g for toppings)
Egg2 , beaten
Active Sourdough Starter 80g
Medjol Date 50g ( pitted and lightly chopped )
Sea salt 1/2 tea spoon
Organic baking soda 1/2 tea spoon
Coconut oil 60g
Maple Syrup 75g
Pu Erh Tea 70g ( use 2g of tea leaf and make tea, cooled )

Recipe Introduction

When East meet the West
This is a very simple yet delicious cake recipe for all.
Pu Erh Tea, fermented tea originated from Yunnan Province, China, rich in antioxidants with high concentration of Polyphenols and Flavonoids and it is very famous among the Chinese.
By replacing the liquid portion with the tea, increasing the depth of the flavour of the cake.
Tea drinking is an art. Something slow down the life, from choosing the tea leaf, brewing and enjoy the tea fragrance. Just like baking, something mindful and pure simplicity. For the desiccated coconut, it is very easily to get from local here in Asia, love the aroma and the whole house smell coconut when you bake this.
The cake can serve with cultured yogurt and a cup of hot tea.

Add all the dry ingredients ( flours, baking soda, salt) in a bowl and mix well Day 211am
Slowly add in the wet ingredients ~ 2 beaten eggs, coconut oil, Maple syrup, Pu Erh Tea, Sourdough starter to the wet ingredients, mix until it is fully incorporated Day 211am
Add in Medjol dates and desiccated coconutDay 211am
Pour the batter in the lightly oiled loaf tin, spread the balanced desiccated coconut on the top Day 211am

How to Store

Room temperature for 3 days or freezer for one month

Top Tips

You may replace the Pu Erh Tea with any black tea, make sure using it when it is fully cooled. Most important, remove the tea leaf immediately once the tea is brew as too high concentration of caffeine might affect the fermentation.
You can use any types of dates instead of Medjol date.
