My favourite way to eat bread is simple toasted with a good French butter. Bake for everyone! I bake normally for the people on the island of Ibiza, people who are interested in local produce and not only healthier but higher quality options. I bake for people with food intolerance issues or people who are conscious about ingredients and where they are sourced. I also bake for myself, due to my limitations I normally bake for myself giving out most of what I bake to the people around me to try, I like to see the reactions of people and make them happy when they try my products. Also enjoy to eat bread with loved ones and share with all of the people that have given me ingredients. Here we have a tradition called TROC... truece was invented many years ago in Ibiza when times were hard and the ibicencos used to just exchange everything with each other. I normally go and pick ingredients from local farmers and then return with some things for them to try.

How I use BALM Protocol

I would like to incorporate it with my current knowledge and do some online courses, retreats in Portugal and Spain, Maybe open another bakery & catering workshop.
