Wednesday Workshop Itinerary

We’ve created a space where you can immerse yourself in the art of sourdough baking without any distractions or pressures.

The Sourdough School workshops are unlike any other in the world, and we want you to enjoy every moment of your journey here. The workshops are designed to integrate with the 12 month Sourdough school online certificate, and ignite a lifelong passion for baking as preventative health.  Below you can see how the workshop activities tie in to some of the corresponding online materials.

  • Workshop and Certificate Syllabus Synergy: The workshop is seamlessly integrated with your 52-week baking syllabus. Plus if you’re studying the diploma, clinical elements are also thoughtfully aligned with your clinical schedule.
  • We have created an effortless learning experience: Forget about scribbling notes or memorising details. We’ve diligently compiled absolutely everything – Every single recipe has been created, photographed, referenced and tested.  From the timing to the specific brands of flour we used, to the timings, temperatures, and to the recommended serving suggestions, along with a 700+ catalogued research library. to boot! Over the past decade, Vanessa and her team have created a phenomenal resource, resulting in over 4,000 meticulously crafted posts and we’ve hand picked 200 hours of lessons for your 1 year online syllabus.
  • Resource Rich:  So when you get home, you’ll have full access to these resources, as well as the weekly live sessions Wirth Vanessa enabling you stay inspired, supported, and curious.  You become part of a community as you recreate and delve deeper into everything you’ve experienced here in the workshops in a structured Sourdough School Certificate programme.

  • To provide a clear outline of daily activities and how they connect to the online part of your course.
  • To encourage a relaxed approach to the learning here at The School because having an appreciation of all that is to come means you can relax, and emerge yourself fully in enjoying the experience, and be fully in the moment.
  • This itinerary has been created for you to better understand that that the workshops are part of a continuous educational journey.

WEDNESDAY 10AM - ARRIVE

Upon arrival, feel free to settle in, we encourage you to make a cup of tea or coffee, put your belongings away and don an apron. It is a homely atmosphere. This is also a wonderful moment to briefly tour of our beautiful gardens and introduce ourselves setting the stage for a day of connection and creativity.

 10am Start

Our sessions are carefully scheduled to start at 10 a.m., and the baking is timetabled, so we ask that you kindly adhere Please do arrive at 10am, and not before. We appreciate that some people like to arrive early, but this is Vanessa's home, and arriving earlier may find her in the midst of preparations. Likewise late arrivals can disrupt the flow of the carefully planned session timings.

11am Connecting the dots .. bread, microbes, gut health, soil and diversity

Engaging and enlightening, designed to stimulate understanding and curiosity this lesson provides foundational knowledge for fermentation and gut heath.

  • Location: Takes place in the garden, weather permitting.
    • Connection with the microbial world.
    • Understanding the role of microbes in sourdough starters.
    • Insights into gut health and soil health.
    • Exploring the nourishment and diversity in bread making.
    • Introduction to meadow and botanical blend flours.

11AM - CREATE A BOTANICAL BLEND

Blending and Milling Flour: Explore the process of blending and milling flour, honing your skills to achieve the desired consistency and flavour. We will gather botanicals to use in your baking.  We will bend, flowers, herbs, spices and grains ready to  mill our botanical blend flour.  We deep dive into this on the online course and later in the year we will ask you to create your own botanical blend. This is a chance to really engage with your senses and get a feel for how you can encompass the things that are local to you when you create your own flour.

1PM WEDNESDAY - LUNCH

1pm  - Lunch is a feast

Lunch is more than a meal; it's a comprehensive, immersive feast that embodies the school's principles It's a feast, we often get you baking flatbreads 0n the hob, and we gather in the kitchen to prep, relax, and laugh, and eat in the garden room, much as people do in the Mediterranean.

Lunch is about connecting to the season, and there is olive oil from the farmers Vanessa works with in Sicily, wine from Vanessa's family vineyard, and a range of recipes that you will find documented in detail in the symbiotic recipe library  - so you can recreate them at home.

  • Location: Served in the garden room.
  • Variety: Includes a range of items like pickles, soups, dukkah, homemade cheese, and vinegar.
