BAKE WITH THE HANDS OF AN ARTISAN AND THE MIND OF A CLINICIAN

Set within the walled gardens of Dr Vanessa Kimbell's beautiful Victorian home in rural Northamptonshire, The Sourdough School is home to the Proven Bread Programme, teaching the art and science of nutrition, the gut microbiome and fermentation in bread. The Symbiotic Eating Pyramid

Learning Objective

The Food Pyramid is a visual representation of how different foods and drinks contribute towards a healthy balanced diet.

We teach a predominately Mediterranean approach to eating, however there really doesn't seem to be a specific diet that is actually Mediterranean. Having been brought in in both France and Italy the diets are very different, whilst some components are the same, for example in the Dordogne we use a lot of walnut oil, but in Italy we use Olive oil. In the Dordogne we eat a lot of duck but in Rome I was forever being fed intestines or some kind of offal.

Learning Outcome

The Food Pyramid allows individuals a freedom and flexibility to choose foods and drinks from each layer depending on their personal food preferences.
