We look forward to sourdough pizza nights here at the Sourdough School. They are a chance to bring friends and family together, enjoy good food and get creative (and sometimes just a little competitive!) with pizza toppings. Over the years we’ve learned a few tricks and techniques for getting the best from our home-made sourdough pizzas. Many of these are really simple, but they can make a huge difference.
So, here are our top tips for making an amazingly good sourdough pizza…
- Choose the best-quality ingredients you can find – everything from the flour to the mozzarella, fresh vegetables and herbs you use as toppings. You will be able to taste the difference.
- The dough for your sourdough pizza should be slightly drier than a classic dough. It makes it easier to handle, especially when you are stretching the pizza base.
- You can make pizza dough using just white roller-milled flour, and this is a good way to start out as you gain confidence in handling the dough. But once you have some experience, try swapping out some of the white flour for spelt, stoneground wholemeal or one of our Botanical Blends. This will bring extra flavour and increase the diversity score of your dough.
- Keep in mind that adding more wholegrain to your dough can affect the rate of fermentation. You might want to adjust the dough temperature or reduce the amount of leaven in the dough to compensate.
- Possibly the most important thing to get right is oven temperature. Domestic ovens need to be preheated to get them as hot as possible. Turn your oven right up and give it time to get really hot. Small, portable pizza ovens, like the Gozney Roccbox, cook best at about 450°C (840°F), while larger pizza ovens can be heated to 500°C (930°F) and will cook your pizza quickly without burning.
- If your pizza still looks a bit wet when it is baked, open the oven door and let it dry out a little.
- Try different topping combinations. There’s so much great produce available – seasonal vegetables, locally made cheeses and cured meats.
- Lastly – and this one is really important – have fun!
