Everything you need to know about using fats in sourdough

Learning Objective

You will find out about the range of fats that you might want to use in your baking and that you will come across in our sweet sourdough recipes. You will learn about the various ways these fats can be used and how they all behave very differently.

Learning Outcome

You will be able to ascertain which is the best fat to use in your baking and understand the differences between various types of fat.

At the Sourdough School, we use a vast range of fats in our bakes. Understanding how to use these fats is key, particularly in sweet sourdough baking. For more advanced bakes, such as a Danish pastry with its complex structure, you will sometimes need to use a sweet starter. Cakes and simpler bakes are more forgiving, so you can use a regular starter and play with different fats for variation in texture and flavour.
