Flatbreads

These flatbreads are a great way to learn to use your 1st build starter as part of your discard process, and also build your skills in shaping as you progress.

Your hands need to touch and feel dough and become familiar with mixing, scaling, sharing and generally handling the dough.

Students are often tempted to skip past these recipes and head straight to the boules.  Please don't .. the success in learning to bake over a year is that you have time to build your skills up slowly, and the core knowledge and foundational understanding you get when following the schedule will make you a better baker ...  so please listen to the audio file below for my advice on why these recipes matter
