Learn how to pickle seasonal vegetables with a simple mix of raw live vinegar, sea salt, spices and a small amount of raw cane sugar.
We made these delicious Turmeric Pickled Vegetables with some students who were attending one of our Sourdough School Diploma courses. We added the wonderfully golden turmeric for its amazing health benefits and its beautiful colour of course. We also use our raw apple cider vinegar – live vinegar that is actually beneficial to your health. Add these Turmeric Pickled Vegetables to any meal as a side, a filling or a topping – they will increase your consumption of probiotics and the diversity of your diet.

Turmeric Pickled Vegetables
Hands-on time: 20 mins. Total time: approx. 3 hours.
Makes about 1kg
Riverford Organic Farmers supplied all the fresh ingredients in the recipe
Ingredients:
- 2 large onions (1 red, 1 white)
- 6 small turnips
- 1 pack breakfast radish
- sea salt
- 125g raw cane sugar
- 2 star anise
- 10 black peppercorns
- 1 and a 1/2 teaspoons ground turmeric
- 70ml water
- 250ml raw apple cider vinegar
Equipment:
- Sharp knife
- Chopping board
- Colander
- Saucepan
- 2x 1 litre sterilised jars with lids
Method:
Thinly slice the vegetables and place in a colander. Add a generous sprinkling of finely ground sea salt. Leave in the colander for 30 minutes.
Add the sugar, star anise, pepper, turmeric and 70ml of water to a saucepan. Bring to a simmer to dissolve the sugar.
Leave to cool fully and then add the live vinegar.
Combine the vegetables with the ingredients in the pan and fill your sterilised jars. Place the lids loosely – do not seal tightly closed.
Leave on the side for a couple of hours. They are then ready to eat. However, you can leave them on the side for longer if you wish. Once the vegetables have the right crunch/softness that you like eat and store in the fridge.
