About
I started baking professionally just over 18 months ago, when I took over an old bakery owned by my employer. They had used it during lock down to sell produce from our small holding, but since lock down lifted it became a glorified storage room. I had many years experience as a pastry chef (14 years) so to take on the challenge of teaching myself to bake commercially felt like a very natural progression. I bake loaves for the restaurant down the road, and also sell many baked goods over the weekend. We have an extremely small team so only operate 3 days a week, but manage to make enough money on those days to support paying wages, bills and rent. We have a very loyal costumer base who sometimes travel from the other side of Bristol to come and buy fresh bread in the morning, which is always a very lovely thing to hear.
I bake to try and understand new processes, how things work, why things work and to satisfy my curiosity, the fact I can also make people happy and feed people along the way is a very welcome bonus.
Favorite way to eat bread: Jambon-Beurre

Bristol based baker. At a micro-bakery called 'The Breadshop' on Chandos road. Operating 3 days a week selling fresh breads, bacon rolls, patisserie and vegetables grown on our farm.
Passionate about Baking as Lifestyle Medicine
I actually first learned about Baking as Lifestyle Medicine during my visit to the Guts cafe opening in London back in June 2023. The whole concept absolutely blew my mind and the more I had learnt about it during my visit the more curious I became. Everything I was told just made perfect sense and there were studies to back it all. I was very humbled to be offered a scholarship and to be given the chance to learn everything I can about the subject! I have just turned 30, and have started to look after myself a lot more than when I used to be a professional chef, I feels so much better for it and would like to be able to pass on any information, especially to people in the hospitality industry.
My Community
To be able to inform people of what we are doing, and how much your gut health can effect your everyday life would be huge. Bristol is a very health conscious city and I think having somewhere that can let people know the countless benefits would be very well received.
How I use BALM Protocol
I would like to be able to help people in the hospitality industry look after themselves more. It is a very demanding and grueling job that can have very serious effects on peoples bodies that seem to just 'come with the job'. I have seen many of my colleagues and friends struggle physically and mentally due to the demanding hours alongside the poor diets and would like to be able to help them look after themselves a little bettter.
