My favorite way to eat bread is as simple as possible, so I can taste the flavor of the bread. Usually I use butter or olive oil at breakfast.
First I bake for myself. Baking bread is how I discovered the pleasure in cooking after many years denying the kitchen. Secondly, I cook for my family. Since I became mother 8 years ago, I pay attention to what food give my children. I also bake for my community, the city of Arujá, with attention to ingredients used, respecting the process of sourdough bread.
I'm based in the city of Aruja, São Paulo State. the city is a small city, with a population of 90.000. Its only 40 km away from São Paulo City, the biggest city in Brazil.
I've opened the bakery for 2 years now, after 1 year of home baking.
Passionate about Baking as Lifestyle Medicine
I'm passionate because its so simple (few ingredients), yet its a complex process to bake a good and health bread. I foung myself cooking bread, and I believe others can find themselves through bread. Baking is also a way to connect to nature, to earth, to environment. Baking also speaks to my ancestors, because we used to cultivate our own vegetables and plants.
Bread it's not the villain in people's diet. It's about witch bread you eat. It's much more about the quantity of industrializes products you eat. We have to explain the difference of a well made bread, how your body react to it.
How I use BALM Protocol
The first people that will be impacted by the knowledge is the bakers and professionals that work with me in the bakery. They will also be agents of transformation and propagators of the benefits of sourdough bread. In the future, I want to work with single mothers, in the way that bread can be a income to then.
